Fresh and Fun Local Organic Cooking Class

Highly beneficial for both personal health and the environment, organic produce is gaining prominence in supermarkets and restaurants throughout Hong Kong. To advocate organic home cooking, Miele invited Vinny Lauria, Group Executive Chefof Homegrown Foods, to show guests how to create exquisite dishes with natural, locally grown produce.  

 

To begin, Chef Vinny brought a selection of organic tomatoes and eggs with non-organic versions. The difference in both look and flavour was truly remarkable.

 

Starting with a Uni Caesar Insalata, Chef Vinny chose organic dinosaur kale for the salad base, freshly hand-picked from farms in northern Hong Kong. He demonstrated how to make garlic and herb croutons, pan-frying pieces of bread before baking them in a Miele oven until perfectly crisp. With a unique take on the recipe, he showed guests how to make a Caesar dressing with sea urchin and a refreshing vinaigrette.

 

Guests were excited at the prospect of making their own pasta for the Farfalle Salsiccia e Tartufo, topped with organic choy sum, homemade truffled sausage, roasted garlic and fresh black truffles. After watching Chef Vinny’s demonstration, they carefully cracked eggs into flour and gradually folded the mixture into the right consistency. After kneading the dough well, guests enjoyed cutting out rectangular pieces out of the rolled dough sheets, then pinching them to form the classic bow shape of maltagliata pasta.

 

For the Steak Pizzaiola, guests were impressed by the quality of the beef tenderloin, sourced from the renowned organic OBE farm in Australia. They learnt the Italian way of dry rubbing the beef using Chef Vinny’s secret recipe for seasoning. With a drizzle of olive oil, the tenderloin was placed in the oven, while guests made a vibrant salsa fresca with organic heirloom tomatoes.

 

As the aroma of sizzling roast beef and homemade pasta filled the room, guests enjoyed their mouth-watering creations with a sense of accomplishment. They could not wait to make their own pasta and nourishing organic food at home with family and friends.
